well, i think i have some insight on 2 of your curiosities. shrimp ARE prawns... from what i understand though is that prawns are larger shrimp and there is a difference where they are caught... freshwater vs. saltwater, but i don't know which is which. (so essentially, that is not very helpful)
and you don't have to tip at pubs as much because their bartenders get paid a higher hourly wage than US bartenders... the bartending 'profession' has a bit more esteem there... they are expected to provide exemplary service, not necessarily get tipped on their level of service.
